Patties are a versatile little morsel of food! They can be made round, small or large, flat or shaped into a finger!

Generally they are small, often a rounded mass of minced meat or fish or vegetables.  They may be covered with egg and bread crumbs & deep-fried in oil. Alternatively, the easier way is to combine the egg and breadcrumbs together to blend all the flavours.

What’s in a name?
In French they are called croquettes, some people call them truffles or rissoles.  Fritters means they are usually fried and some call them pastel and nuggets.

Makes about 16 patties or 4 tapas serves

450g eggplant (cooked)
450g potatoes (cooked)
salt and pepper
2 large eggs
dash of cinnamon
1 clove garlic
1 cup (gluten free) bread crumbs
1⁄2 tsp ground cumin
1/2 cup grated tasty cheese

In a bowl place the mashed potato & eggplant, cumin, cinnamon, garlic, salt and pepper.
Mix well with your hands.
Stir in the breadcrumbs, eggs, cheese and mix thoroughly.

Form the mixture into medium balls/patties
Deep fry for a few minutes each side

OR

Roast for about 30 minutes until browned.

Serve with Sofrito sauce.
