To make this cake look even more impressive I fried slices of eggplant and then put the mixture in. A couple of minutes on each side to fry the slices then add parmesan cheese already prepared with chopped basil/parsley or dried oregano.
2 large eggplant, cut into cubes
1 medium leek or onion, chopped (optional)
2 eggs (beaten)
1/2 cup milk
Salt & Pepper
A bit of cinnamon or nutmeg
1/2 cup chopped walnuts
Cheese grated (optional)
Preheat the oven 180C (fan forced)
Prepare ramekins or a baking dish with spray or brush with olive oil
Toss the cubes of eggplant in olive oil then into a baking dish to bake for 30 minutes.
Stir and add chopped leek/onion.
Bake for another 15 minutes. Remove from the oven and place in a large bowl.
Allow to cool slightly.
Add the beaten eggs, cinnamon or nutmeg, salt and pepper, milk, cheese and stir.
Pour into a prepared baking dish.
Cover with grated cheese and bake for one hour.
Optional add chopped walnuts.
