Sweet Potato & Ricotta fritters

2 sweet potatoes, peeled, cubed
Garlic
Olive oil
1 cup flour (potato or rice as alternative to wheat)
1 cup ricotta
¼ teaspoon grated nutmeg
salt & pepper
1 teaspoon baking powder
2 eggs
½ cup coriander, fresh chopped

Pre heat the oven and prepare a roasting pan

Place the garlic together with the cubed sweet potatoes in olive oil and bake for about 30-45 minutes.

Remove from the oven and mash the garlic together with potatoes, flour, baking powder, ricotta, eggs, nutmeg and coriander.

Mix well, season to taste.  The mixture should not be too sticky, add a little more flour to make them less sticky.

These are best when fried in oil for about 3-4 minutes on each side – until just golden.

Alternatively, little patties can be placed on a tray and baked for about 20 minutes.
